It is the Brasserie du Mont des Cats which inaugurates the course of the Brasserie Saint Bernardus. In fact, the monks of the Abbey of Mont des Cats created the refuge of Notre Dame de Saint Bernardus in Belgium at the beginning of the 20th century and made their famous cheese there. The cheese dairy was then sold by the French monks in 1934 to Mr. Evariste Deconinck who sold the cheese under the name Saint Bernardus Watou.
After the Second World War, Trappist Abbey of Westvleteren yielded its license of beer to the cheese factory, which became the Brasserie Saint Bernardus. Saint Sixtus beer is then developed and marketed.
In 1992, the Abbey of Saint Sixtus takes over the license of its beers. From the Brasserie Saint Bernardus brews the same beers under the name of Saint Bernardus.
Saint Bernardus Prior is a beer of high fermentation and fermented in a bottle with creamy mousse. It is a dark beer with a balanced flavor between malt and hops.
